Alicante Spain and Costa Blanca

The entire region of Costa Blanca has an excellent climate that attracts hundreds thousand sun-seekers each year. Protected by massive mountains from the cold continental winds and influenced by the Mediterranean Sea, Costa Blanca offers you many sunny and warm days during the year with stable temperature and almost no rain. Its beautiful sand beaches are surrounded by subtropical vegetation, picturesque terraces on the hillsides, almond orchards and orange groves. Splendid long beaches and high mountains in the background, offer you great sightseeing opportunities. Here, the modern tourist facilities are well combined with the Spanish culture and traditional way of life.



The best way to try something typically Spanish is having a dinner in one of numerous restaurants in Alicante and other towns. Try our delicious Mediterranean cuisine with great and sometimes surprising flavors. You can enjoy many traditional dishes with seafood, chicken or rabbit meat, the famous jamón (Spanish jam), tasty potato tortillas and a great variety of tapas. However, the most famous local dish is, without any doubt, Paella Alicantina – authentic rice dish.

If you do not plan to travel to Spain this year, try to prepare paella at home. It’s easy. You can do it in just one hour.

What you need is: 1/4 kg of chicken meat (2 and 1/2 pound),
300 grams (10 oz) of clean anglerfish,
250 grams (8 - 9 oz) of sweet red pepper,
300 grams (10 oz) of grated tomato,
1/4 litre (1 cup) of olive oil,750 grams (1 and 1/2 pound) of rice, 1 nyora (Spanish red round pepper),
1 bulb of garlic (or garlic to taste),
300 grams (10 oz) of red shrimps and 2 and 1/2 liter of water (10 cups).

Start by cooking chicken chunks with chopped onion in water for about 10 minutes. Take out the meat and put chicken broth aside for later use. Now, heat olive oil in a paella pan – or any other large wide pan that you have. Fry nyora (Spanish red round pepper) for a while. Take it out and mash it in a mortar with a bit of salt. Finally, fry 6 strips of red pepper and shrimps and reserve them for the garnish.

In continuation, fry chicken chunks and cleaned anglerfish together with minced garlic and grated tomato. Once the meat is tender, pour in rice for paella and fry for a while. Add previously prepared chicken broth, nyora, saffron and salt to taste. Place strips of red pepper and shrimps on the top of the paella. Cook for about 20 minutes more until water is absorbed and evaporated and the rice is done. This tasty paella is a typical dish in the Valencian Community and Costa Blanca.
